This yummy smoothie has what you need on a hot summer day, and packed full of nutritious spinach, avocado and a hint of peppermint.

Ingredients
1 large cucumber or two small ones
1/2 avocado
1 dash coconut milk
3/4 cup baby spinach
1 handful peppermint leaves or 4 drops peppermint essential oil or extract, to taste
1 handful ice optional
